CHEF FRANCESO CARVELLI
Born in Mesoraca, Italy, small town of Calabria, Chef Francesco grew up with the passion of cooking passed from her mother Elisa Carvelli and support of his father Salvatore Carvelli. At the age of 13 years old, he decided to go to culinary school in Calabria, where he developed his skills in the kitchen and discovered the love for food as an art. After graduating, he went to Bellinzone, Switzerland to work on his first restaurant “Il Nuovo Fiore” where he learned the art of making pizza, he went back to Italy to work at “L’ Impero” restaurant. At the age of 20, came to USA to work at his brother's restaurant "Davinci's" in Marco Island, Florida where he became a Sous Chef and right after, a Chef.
SOUS CHEF ROBERTO ROCHA
Born in Lima, Peru and raised in Miami, Florida. In 2009, Chef Roberto was hired as a line cook at Davinci’s Restaurant. As a young cook, he had the opportunity to work closely with Chef Giovanni Terraglia and now Chef Francesco Carvelli. Both of these great chefs have helped Chef Roberto to gain a big passion for cooking and food. Ever since then, he has been committed to do a 360 degree change with his life. A few years later, Executive Chef Francesco Carvelli took Chef Roberto under his wing and give him the chance of be his Sous Chef at The Oyster Society. After nearly 2 years of constant hard work, trying new recipes and techniques, Chef Roberto was given the chance to work with Chef Chris DeGenova. Soon after, Chef Francesco gave him another opportunity to work next to him at Marco Prime Steak & Seafood as his Sous Chef. Together, they have a new concept on executing and plating new recipes, bringing joy to the eyes and palate of our customers! Chef Roberto is proud to have had his career grow with the Carvelli family! This journey has just begun, and Chef Roberto can't wait to bring you more new, creative and beautiful dishes!
